- 2 cups sugar
 - 2 cups flour
 - 2 teaspoon baking soda
 - 2-3 teaspoons cinnamon
 - 1 teaspoon salt
 - 4 eggs, beaten
 - 4 cups grated carrots
 - 1 1/2 cup vegetable oil
 - 1/2 cup nuts (can be placed in the cake or sprinkled on top)
 
Cream Cheese Frosting:
- 3 ounces cream cheese
 - 1/3 stick butter
 - 2 teaspoons vanilla
 - 2 cups powdered sugar
