Melissa Hartley's Carrot Cake

Cake:
  • 2 cups sugar
  • 2 cups flour
  • 2 teaspoon baking soda
  • 2-3 teaspoons cinnamon
  • 1 teaspoon salt
  • 4 eggs, beaten
  • 4 cups grated carrots
  • 1 1/2 cup vegetable oil
  • 1/2 cup nuts (can be placed in the cake or sprinkled on top)
1. Preheat oven to 350 degrees. Combine and mix wet ingredients. In seperate bowl, combine dry ingredients and then add them to the wet. Bake for 35 minutes.

Cream Cheese Frosting:
  • 3 ounces cream cheese
  • 1/3 stick butter
  • 2 teaspoons vanilla
  • 2 cups powdered sugar
1. Mix together and thin with milk if necessary.
